Fruit Salad

Lemon Juice, 2 fl oz

Quick-Baked Fish

You can use any kind of fish for this recipe. (Different varieties may have different nutritional values.)

Sweet-Tart Cranberry "Sauce"

This is what I use instead of regular cranberry sauce. You can use any flavor Jello. I usually use a red flavor, but orange might be good, too. Only the Jell-o adds sweetness, so it will be fairly tart

Cranberry Muffins

This was going to be Cranberry-Apple Muffins, but someone ate my applesauce. This recipe will be changed the next time I make it (if it turns out well), substituting chunky applesauce for the oil. Even with the oil, these aren't too high in calories.

Curried Salmon

This is a super simple recipie. It takes a little time because the salmon tastes better if you let it marinate in the curry before cooking it. I generally serve this with pineapple sweet potatoes and a green salad.

Shiba's (http://www.katmandufood.com/) spice is an important ingredient. The yellow "curry powder" easily found in most American grocery stores will not taste as good. If you don't use Shiba's make sure it is an authentic Indian curry powder.

(This isn't an authentic Indian food, but with Shiba's spices it tastes authentic.)

Butternut/Broccoli/Mushroom Medley

We ate this with only Parmesan cheese and it was a bit bland. We will be trying it with spaghetti or marinara sauce, next time.

Chicken Vegetable Stirfry

This is lighter tasting than most stir fry dishes I've had in restaurants. With rice, it's a satisfying meal.

Barley Lentils

I made this one up and will probably be tweaking it over time. (10/15/'09) Using canned broth is too high in sodium and tastes salty, so that will be the first item I change. I used this to make 2 different lentil soups -- Lentil Spinach and Vegetable Lentil. They were not too salty.

Black Bean Burrito, Indian Style

This is another one I got online and found on several sites when looking it up for credit. Again, added here because we absolutely LOVED this. I changed the topping from lettuce and bottled salsa to home made salsa. I also added a bit of chili pepper. The original recipe also calls for whole wheat tortillas. We don't usually eat burritos properly, so I left them off. If you make proper burritos, be sure to add those to your tracking.

I found this recipe online, but don't remember the site. When I searched, I found it on 4 sites. I've added it here because we liked it and want the nutrition information.

Buttermilk Cornbread

This is a slight variation to a recipe I found here, but can no longer find.

Burrito Filling

This tastes good with or without the tortilla. We eat it without salt to keep the sodium low. I took out the rice, which proved not to be necessary.

This recipe started out as the overly sweet holiday sweet potatoes with brown sugar and marshmallows. Once I discovered how good they are without the sugar and marshmallows, we started to eat them more often. It's super simple.
