Sangria (using 2 ounces of sangria and filling glass with ice and no calorie lemon or orange carbonated water)
Absolutely delicious dressing to use on greek salad, salad greens or in pasta dishes. Also works well to marinate chicken in. Works best to make it a day before so the flavors all blend...and it doesn't need to be refrigerated. Just put everything into a mason jar, screw on the lid and shake it until blended!
Spicy Mexican Shredded Chicken and Onions cooked low and slow in the crockpot. I cook mine in a very small crockpot that doesnt heat as hot as my large one, so it takes about 10 hours or so. Because I only cook about 10 ounces of chicken breast (enough for a couple of meals for me and then I turn the rest into a pot of mexican soup), it is pretty saucy. You could easily add another 5 ounces of chicken breast to feed a family and still have leftovers.
Delicious as a side dish or to double up as a yummy and comforting main dish. Also great for New Years!
Lots of filling vegetables and pre-cooked turkey sausage crumbles (new from Jimmy Dean). Can also scramble a couple of eggs to bulk it up but be sure to add in the extra calories/fat.
Lightened up version of one of my favorite pasta dishes.

Can also be made as a meat free soup by leaving out the chicken...replace chicken stock with vegetable stock and add some frozen spinach.
Delicious low fat/low calorie soup that's chock full of flavor. Perfect to eat as a first course to help fill-up and get in some veggies. Also great with a baked potato for a light meat-free evening meal.
Had cooked some extra brown rice and needed to use it so tossed together this satisfying and spicy spanish rice. Perfect to use up leftover rice and tomato sauce. To make it a main dish, add some black beans, shredded chicken, extra tomato sauce & spices, put it in a casserole dish, sprinkle with a a couple of tbls cheese and bake.
Olive Oil, Canola Oil, olive oil spray, oysters crackers, lots of red pepper flakes
3 Meatballs per serving. It's really more than 4 servings of pasta but only 4 servings of meatballs...so it would actually be a little less calories.
