I make my meatballs with the recipe below because i have a dairy allergy and cannot use regular season breadcrumbs or regular milk. So i make my own breadcrumbs omitting the parmesan. I also really LOVE Garlic :-)
I'm a huge garlic fan. If you're not, you can omit some of the garlic in the recipe.
I really enjoy French Toast occassionally and tried to make it a bit lighter in calories and fat. I did use Splenda, but for those of you who don't believe in sugar substitutes, please go ahead and use the real thing (just remember the nutritional value may change some). Additionally, my wheat bread is pretty hefty and about 100 calories a slice. If you use a light wheat slice, your calorie count will be less.
I like to serve this over a bed of shredded cabbage drizzled w/ a little balsamic vinegar. I usually add an extra Tablesoon each of craisins and walnuts when i eat my salad ( not counted in nutrition facts..just a suggestion)
3lbs chicken is 48 oz. Makes 12 4oz servings.
I adapted this recipe from one I found on a Weight Watchers site. I always like to add in veggies and extra spices whenever I can.
Great Vegetable Idea. No cheese or pasta added to this version. I love serving w/ a side of spaghetti squash (squash not included in nutrition info).
You can also add other veggies to your lasagna or cheese if you like. Just remember to add up the nutritional value of those items to recipe.
This recipe can definately be doubled if you want more.
You don't have to use the oil if you don't want to, you can use pam, but either way cooked sweet yellow plantains are so delicious.
This recipe is just for cooking the plantain, but after it's cooked you can do so much w/ the plantains. You can add cinnamon and splenda, or for something more savory top off w/ ground turkey or chicken and a sprinkle of cheese after it's cooked.
Make sure to use a yellow plantain that has black spots more than yellow skin. These will be the sweetest.
Lowfat chicken chili w/ a nice twist. *Note: I usually serve over salad, or sometimes w/ a small dallop of LF sour cream and a Tablespoon of RF Cheddar. It's really good to dip Tostitos scoops in. These ingredients are not included in the nutrition...just some tips :-) Enjoy!
I usually serve these w/ whole wheat soft tacos w/ lettuce and tomatoes, but i also eat leftovers over salad.
Good source of fiber and healthy fats.
