This soup is a must for all year 'round enjoyment.
This is an old recipe from Prevention Quick and Healthy, 1995.
Recipe calls for egg substitute but I used 3 eggs.
I use an 8 and 6 count muffin pans. This can be done in a 12 and 6 count but are a bit smaller muffin.
The original recipe calls for 2 cups vegetables which I didn't calculate and also called for 1/4 cup Parmesan of which I didn't add to my pizza.
Found this recipe going through one of my cookbooks. I altered it so it is not exactly as it is found in the book. There was no Splenda or Cinnamon. I also used pecans instead of the Walnuts it was calling for.
This one serving omelet is quick and delicious.
Although there are a lot of ingredients, this could not be simpler. Just boil the water while preparing the dressing, And cut up veggies while the pasta is cooking. In no time you have a delicious meal.
I found this on allrecipes.com as Chicken Noodle Salad with Peanut-Ginger Dressing. I tweaked this recipe to my taste as I would not be able to eat fresh ginger and red pepper flakes to the mix. It would have been way to spicy. You can make it vegetarian by omitting the chicken and adding tofu if you wish. Great for when you have a crowd.
You could add edamame or cauliflower to the mix. Any veggies you prefer.
This is excellent with warm pasta and chicken.
