Cook's Notes: The batters may appear to mix when you pour them into the pan, but they completely separate while baking, with the flan ending up on the bottom when it's inverted. I like eating it warm, but traditionally, it is chilled 24 hours before serving.
Flan is a rich, creamy, cooked egg custard. It is often flavored with vanilla and baked in a water bath to retain its delicacy.
Cajeta is a thick and creamy spread or paste made with caramelized sugar and milk. It is used as a desert on its own or as a topping. Also known as "dolce de leche," it is sold in many supermarkets, Latin specialty markets or online. It can be substituted with a thick caramel sauce.

Ajvar is a Croatian / Serbian roasted eggplant-sweet-pepper mixture, sometimes referred to as vegetarian caviar. It can be mashed or left chunky, depending on personal taste, and served as a relish, vegetable or spread on country-style white bread like pogacha as an appetizer. Its smoky flavor is a great match for grilled or roasted meats, especially lamb.
You can vary this recipe by adding chopped hot red chiles and onion, and substituting red wine or red wine vinegar for the lemon juice. Bulgarian kiopoolu is similar but it uses green peppers instead of red and tomatoes are added.

This recipe for Serbian vegetable casserole or djuvece uses summer's bounty -- zucchini, tomatoes, carrots, celery, potatoes, onions and green pepper. The dish is started on the stovetop and then mixed with rice and baked. It makes a great Lenten dish or vegetarian main course.
Garlic isn't traditional, but I like to add it. You will probably need 2 teaspoons of salt because the rice and veggies really need it, but use at your discretion. Here's a larger picture of vegetable casserole.

It has been said the casing-less sausages known as cevapcici found their way into Eastern Europe via the Ottoman Empire, which picked them up from Arabic cultures around Persia.
Today, there are different versions of cevapcici throughout Croatia, Serbia, Bosnia-Herzegovina and Macedonia. Some use pork and lamb, others use pork, lamb and beef, and yet others omit the pork entirely.
Originally, they were skewered and grilled over an open fire. Nowadays, most cooks grill, broil or pan fry them. They make great appetizers and sandwiches on lepinje bread!

This recipe for Croatian stuffed cabbage or sarma is from Klara Cvitanovich. She is the owner with her husband and son, Drago and Tommy Cvitanovich, of Drago's Seafood Restaurant in New Orleans and Metairie, La. While Eastern European foods are not on the menu at the family restaurant (see the recipe for Drago's charbroiled oysters), Klara still cooks the foods of her beloved Dubrovnik, Croatia, at home, especially for Christmas.
This recipe makes enough for a crowd and, since they taste even better the next day and the day after, you'll have tasty leftovers!

This recipe for Croatian potato moussaka or musaka od krumpira demonstrates the influence of Greek and Turkish cuisine on the Balkans. Instead of eggplant, this moussaka is made with potatoes. And instead of the béchamel or white sauce common in Greek versions, this Croatian moussaka sports an egg-custard topping. Some toppings call for sour cream, but I've used cheese here. The potatoes are typically deep-fried or pan-fried, but I've blanched them in water to lessen the carlorie load.

This one is made in a 9-inch-by-13-inch pan in the Armenian style (boreg) like baklava. The Jack and cottage cheese in this one definitely make it an Americanized version, but delicious nonetheless!
