Sweet potatoes and pecans in the crockpot

Adapted from http://crockpot365.blogspot.com/2008/10/pe
can-topped-baked-sweet-potatoes.html. I eliminated the cranberry sauce and reduced the sugar and butter. High in calories, fats and sugars, but the fats are mostly monounsaturated, so if this fits into your ranges I say it's worth it.

Sweet potato latkes

I thought I'd try a twist on the traditional latkes this year!

Stephanie O'Dea's Crockpot Chicken Makhani

My husband says this is the best chicken he has ever tasted, homemade or restaurant. For 340 calories, that's not bad! You can easily adjust the spices to make it spicier or sweeter, depending on your tastes. It takes 20 minutes to prep, mostly to chop the onion, and then you just pop it in the crockpot and ignore it til dinnertime!

Creamy nonfat popsicles

This is my favorite summer treat! Just mix yogurt and juice concentrate into popsicle containers and pop 'em in the freezer, and you've got a sweet high-protein breakfast treat or afternoon snack. This recipe was calculated with frozen OJ concentrate, but you can use any flavor--my favorites are orange pineapple and rasberry.

Green Bean Salad

An easy dish to prepare in advance of a potluck or dinner party.
