Bread Machine Whole Wheat Bread Recipe

This is my "Go-To" bread. It has more calories than bread you buy in the store, but it is homemade, so you don't have the preservatives. I have it memorized, I use it so often!

Red, White & Blue Muffins

A friend of mine posted this recipe on Facebook today. After I entered the ingredients, I realized that this recipe is healthy, but probably not as healthy as it COULD be. I'm substituting the oil for unsweetened applesauce. By cutting out the oil, I'm saving close to 50 calories/muffin. : )

Mom's mac & cheese (MY way)

This is my Mom's mac & cheese recipe, just scaled down with low fat cheese and turkey dogs instead of regular hot dogs. If you don't like hot dogs, just skip that step - they are not included IN the macaroni, just cooked on top!

Chicken Soup Recipe

Throw all ingredients into a pot and allow to cook for at least an hour. Remove the chicken from the pot about half way through and cut apart or tear apart with forks. I like my chicken nice and chunky, so I cut mine into big pieces.

Crock Pot Beef Stew

I searched through many recipes to find a beef stew recipe, but none of the ones I found struck my fancy, so I decided to make up my own. Next time, I'll add a little more salt and pepper when I cook it, but, I'd rather add later on then have to subtract... nothing worse than stew that's too salty! With the veggies, cut, chop, dice or slice them. Your preference. A crusty bread served with this is delicious! : )

Pumpkin Cream Cupcakes

I found this recipe in the Kraft food & family Holiday 2009 magazine. The original recipe had 190 calories and 9 grams of fat. I entered this recipe into the recipe calculator to see if I could make it less "fatty" by substituting the cream cheese with fat free cream cheese and the vanilla pudding with sugar free, fat free vanilla pudding. I also substituted the original canned pumpkin for no salt added canned pumpkin.
