Recipes I've Shared:

Meatball Tortellini Stew

Hearty, delicious comfort food for those cold days!

Diet Cola BBQ Chicken

This is a tweaking of another recipe I found here. I used a combination of Heinz reduced sugar and balsamic ketchup, and about 3/4 diet cola and 1/4 diet root beer. Delicious!

Simple Balsamic Crock Pot Chicken

Simple and easy dinner!

Undone Cabbage Rolls

All the flavor of cabbage rolls without the hassle of rolling them!

Creamed Chicken (for patty shells, biscuits, etc.)

I threw this together for dinner tonight. I was feeling kind of uninspired, but it turned out pretty yummy!

Fish Stick Casserole

Slightly healthier version!

Corn and Black Bean Tacos (beef)

Does not include taco shells in nutritional info.

Fresh Fruit Salad

Had a bunch of fruit I wanted to use up before it went bad. This did the trick! I did not want to have to make a sauce for it, so I didn't use bananas or anything that will turn brown.

Undone Stuffed Pepper Casserole

This is delicious!!! My entire family loves it! So yummy, and super easy too!

Andi's Asian Chicken Salad

Threw this together one day....so quick and yummy!

White Bean Turkey Chili

I usually use ground (or diced up) chicken, but tried it with turkey and it was just as good...so I calculated it using turkey. NOT INCLUDED in the nutritional values, but recommended topping would be a tablespoon of sour cream. It totally makes the dish!

Fantastic Creamy Italian Crock Pot Chicken

I took a recipe that a friend had and tweaked it a bit (to make it a bit healthier)....it's AMAZING!! Enjoy! I served it over tri-color fusili pasta, but it would be equally delicious with rice, or even patty shells or biscuits. (recipe does not include nutritional info for pasta, etc)

Elise's Sesame Noodles

found this on food network.

Andi's Meatballs

My whole family loves these meatballs! As a matter of fact, my husband looked at me like I was a lunatic when he saw me putting the spinach in, but he was sold after trying them. He claims that I make the best meatballs. :)
