I created this easy and healthier version of the old favorite tonight because I had some leftover cooked turkey breast. You could substitute chicken breast and reduced-fat crescent rolls (or use 1 roll instead of 2 per serving) to make it even healthier. Two rolls is a great ratio if you're dividing the "filling" in to 4 servings - it is hearty you don't want a side dish, so you may not finish it!
This salad is a great chilled side dish for fajitas, enchiladas or just about anything. My family likes to put it IN their fajitas or use leftovers on nachos or quesadillas.
