This sauce goes great with chicken and fish - especially good with grilled salmon. I also mix this with a 1/4 cup cooked pasta, some grilled chicken strips and sugar snap peas for an awesome lunch! Calories and fat are cut significantly by using PB2 powdered peanut butter. And it is JUST as yummy!
I make the sauce for Adell's Teriyaki Pineapple Chicken Meatballs and serve over brown rice. Sweet and yummy!
Found this recipe on the Betty Crocker website. I LOVE lemon and rosemary is my favorite herb. Couldn't go wrong with this combination!
A light lunch inspired by another SparkPeople member. Added a couple extra ingredients for a yummy and healthy lunch.
From Betty Crocker....yummy! I serve with grilled red potatoes (with the same spices/lemon juice and a touch of tomato sauce) and a frozen mixed veggie.
These go great with the Mediterranean Turkey burgers and they're easy to make on the grill or in the broiler. You can lower the sodium by using a good grey sea salt (Celtic Grey is lower in sodium) instead of table salt. You can also add lots more flavor with some additional herbs. I chop some basil, rosemary, sage, whatever I can clip from my herb garden.
I found the company that makes the pyramid shaped lavender tea bags they use in Ruby Tuesdays for this drink so now I can make them at home for a fraction of the cost!
Slightly modified from the recipe on the back of Sorrento's fresh mozzarella package.
This has been a family favorite for years! But I've modified it a bit to lower the fat and calories. I used Ragu Light Tomato & Basil instead of marinara and you can lower the fat and calories even further by using part skim mozzarella.

It's always a hit at our house. I used to make it all in one pan but lined muffins tins are much easier - and it helps with portion control! These are great for lunch with a salad or as a snack. You can lower the fat a bit by using egg substitute and a lower fat cheddar, but I didn't have any on hand. I've also tried using 2 Tbsp canbola oil and 2 Tbsp light sour cream instead of the 1/4 cup oil but it does affect the texture a little - making them a little bit drier.
This is from the Better Homes & Gardens Eat Well Lose Weight cookbook. I used fresh tomatoes instead of canned, added onion, spaghetti, and increased the chicken (my husband will never agree that four oz is a serving!) It still comes in just over 400 calories!
I altered Levelyn03's recipe a bit because I wanted the sea scallops seared rather than sauteed and I preferred olive oil to butter. Also, there wasn't enough sauce so I added more lemon juice and a bit of chicken broth. And because I am a maniac for anything lemon I also added some lemon zest. My husband never liked scallops and he really liked this dish. I also cut it down to 2 servings because that's all I cook for. Great job LEVELYN03!
Same ingredients as the packets but without the massive amounts of sodium! Makes 4 servings of 2 tablespoons each.
Super quick and filling. You can add additional veggies and switch to whole wheat pasta.
I combined two other members' recipes, used turkey instead of chicken, and a basil/tomato feta instead of plain. My husband doesn't ask for beef burgers anymore!
This came from RecipeZaar; the only change I made was in using fresh spinach instead of frozen and I used tomato and basil feta instead of plain. It made it sooooo tasty! Next I'm going to try this stuffing in chicken cutlets. Great served with Lemon Garlic Spinach and a brown rice pilaf with raisins.
