Healthy Pumpkin Bread

I think one cup of sugar is sweet enough but if you like things on the sweet side add 1/4 c. stevia.

My basic meatloaf- Makes 4 large or 6 med. size servings. I like to use muffin tins for baking and portion control.

Pumpkin Spice Latte

This can be made with any kind of milk. Some may prefer to use sweeteners instead of brown sugar. More pumpkin can also be added if you like more of that flavor.

Italian Sausage Soup

This could be done with no chopping and could be done in an hour from start to finish.
I used Jennie-O Breakfast sausage when calculating Info because I frequently can't get the Italian sausage.)

Healthy Seafood Pasta

I have made a seafood pasta for years but, although very tasty, it was not very healthy. This is also very good but much better for you. This can be adjusted to your taste. If you don't like something leave it out.

Fresh Berry Truffle

Use any fresh berries available. You can add a little Grand Marnier or berry flavored vodka to berries and sugar for a little extra zing.

Chicken Tomato Soup

Healthy change to your normal chicken soup. I roasted a skinned chicken and used half of it.

Angelfood Trifle

This is wonderful, fresh dessert for the summer. Any summer berries could be substituted. I usually use sugar-free angel food you can get at Walmart and day old works great.

Very hearty main dish. Great with potatoes, rice, or noodles.

Red Cole Slaw

This is a wonderful add on to a sandwich or as a salad. Lots of chewing to give you a satified feeling.

Guilt Free Hash Brown

I crave hash browns and potatoes in general. This recipe is full ofr flavor and simple. It is easily adjusted to your own taste and a good way to get more vegetables in your diet.
