Quiche is something I discovered in adulthood, it makes me feel grown up and healthy, and now here's the vegan version!
Vegan pumpkin scones! Sweetened with stevia - good for diabetics and other low-sugar peeps! Nutritional information is for the basic recipe, but add 1/2c chocolate chips and 1/2c walnuts for some extra yumminess and they're only 177 calories! You can also make them with Wheat Flour instead of the White for extra fiber.
This is a great warming soup to get your digestive system running and keep you full! You can substitute any veggies you like, or even add a few more!
