Black Bean Soup

Made from odds and ends in the fridge and pantry. It is sort of a cross between veggie chili and black bean soup. Because I used chx stock, it is NOT categorized as vegetarian, but that can easily be fixed.

Turkey Cutlets

Similiar to other turkey cutlet recipes, but dredged in whole wheat flour.

Rhubarb Cake

I use Smart Balance Butter Blend with lowers the fat a notch. At 300 calories per (generous) serving, for a dessert treat it is not too bad.

Mini Turkey Meatballs

We make these with a truffle scoop which holds about a tablespoon of the meatball mixture. The miniature size was a big hit with the kids!

Jen's All Purpose Marinara

I do use a touch of whole milk to add a bit of smoothnss, but it still comes in at under 100 calories per serving.

Vegetable Saute

This came about when I had a lot off leftovers in the fridge, and I had not eaten very well the previous day so I was trying to redeem myself by eating a huge portion of vegetables.

Homemade Balsamic Vinaigrette

I like to make my own dressing- it tastes better and has no preservatives and I can control the salt.

Hodgson Mill Whole Wheat Buttermilk Pancake mix

This is the recipe formula from the box- it made enought for me and my 2 boys. My husband does not do dairy so he makes something else on pancake day!
