Super moist and delicious! I made this in my food processor and it was really quick and easy. Baking it slow at a low temperature keeps the bread very moist.

I substituted ground turkey, low fat ricotta and mozzarella cheese to make this lower in fat. I made it the night before and put it in the refrigerator. I served it while we were camping the next day and it was a big hit with everyone. I used the no cook lasagna noodles and it really saved a lot of time. They came out very tender. This is also great for a dinner party because you can make it ahead of time.
I did not include nutritional value for bread or crackers. I substituted plain, fat free yogurt for mayonnaise.
This is a great way to get a lot of vegetables in for those picky eaters. It is also very filling and keeps you satisfied for a long time. I make it and freeze it in 1-cup servings to have on hand for a quick and filling lunch. It microwaves great! I use a small food processor to cut down the time of chopping the vegetables. You can eliminate the crushed red pepper if it is too spicy for you.
