I love these for a Sunday Morning, of course I only have two or three, as one servining is for 2. Cooking time depends on your waffle iron also.
Lower in sodium and calories if you break it up into 4 servings. I use plain tofu for this one. Good over brown rice.
Makes 6 servings since you cut the three zucchinis in half, so it is good to save for another dinner. I have mine with some mashed potatos.
I love making my own sauce. This recipe makes plenty to keep left overs in the fridge so you dont have to make it every time. I calculated six half cup servings. I combined 2 different recipes and it turned out great!

A great and protein rich supper. I use dried pinto beans and soak them, the recipe actually calls for a 14 oz can, but I use a cup of dried beans. It also calls for a 1/2 jalepeno, but I dont miss it, I guess if you want, you can add it in. Recipe is from La Dolce Vegan by Sarah Kramer. I love this book. This is great over rice--not added in.
I got this from La Dolce Vegan by Sarah Kramer. It is put over rice, not added in. This time I used a baked marinated tofu that I bought, I just usually use firm tofu--1/2 lb, so recipe can be adjusted.
They seem to turn out better if placed in muffin tins. They are simple and go good with pasta dishes. I love them with my spaghetti. Sometimes I use wheat flour and usually omit salt. I also cut the recipe in half for myself,as they dont keep to well, I even tried freezing the dough. Just doesnt taste the same. Also from the book La Dolce Vegan.
I love these for breakfast on the run, or just when I dont feel like cooking. They are low in calories, even whith white flour they arent bad. I of course cut the sugar to 1/4 cup, but this recipe is calculated at the 1/2 cup measuring. I got this from 'La Dolce Vegan" by Sarah Kramer.

I like to make this for quick lunches. It is easy, fats, and good for the budget. I use celery flakes instead, celery seed doesnt taste right in it. I cheat and chill the dressing part for half hour, and eat when mixed.
I sometimes make these with oats, or any dried fruit--cranberries are really good. I of course cut the sugar and use turbinado instead of white sugar.
