Adapted from a recipe in "The Vegetarian Mother Baby Book" (out of print).
This recipe makes 4 generous servings. It could easily feed 6 people with lighter appetites or lower calorie needs.

I usually eat this with seared salmon, but it can be eaten by itself or paired with any other meat. When I served it to my mom and sister, they felt they were eating gourmet food. It's a really great way to get your fiber in.
