For those hot summer months when eggplant is abundant but the yearning for hot soup is not.
I am already getting winter squash from my CSA!! So far, I've been roasting, pureeing, and freezing it. I think this will be one of the first recipes I make come fall.

It's Hatch chile season again - whoo-hoo!!
If you don' t have access to Hatch chiles, this will also work with Poblanos.
I get overloaded with eggplants and sweet peppers every time I do a CSA pickup. I found this recipe today on Simply Recipes. They recommend you use the fresh mozzarella packed in water - nutrition info is calculated for part-skim.
Serve this cold for a refreshing summertime meal.

Hmmm, what to do with all the fresh veggies I'm getting from the farm? This pizza is a tasty way to use those summer treats.
I threw this together last night when I wasn't sure what to eat. It came out well.
A honey mustard sauce covering Quorn Chick'n and summer's bounty. Sunchokes are Israeli artichokes - substitue small potatoes or turnips if you don't have any.

I adapted this recipe from Macheesmo. This recipe counts one serving as one whole potato. If you're like me, you might find that you can only eat half a potato.
If you are not making 4 potatoes, be sure to adjust the ingredients accordingly.
I feel very full after eating one half of a potato - my boyfriend, on the other hand, will eat one large potato easily. Adjust your servings accordingly - nutritional stats are for one half of a good sized Idaho potato.
Mom's coming town and it's summertime! This will make her happy, and use summer's bounty. :-)
Tasty, healthy fish tacos. The fat is high, but it's healthy fat from avocados. :-) You can omit the olive oil if you have non stick pans. Prep time goes fast if you use your food processor to make the salsa!
I got this from Macheesmo! Best served cold or at room temperature. Add some extra vinegar to refresh leftovers.
This is awesome with garden fresh tomatoes and herbs.
Yummy and healthy alternative to beef!
A low-fat, vegetarian version this classic al fredo dish. Sure to please even the meat eaters in your family!
