I needed to use up some broccoli and spinach on a cold day. Hubby doesn't care for spinach...what a great way to hide it...LOL. You do get a rather green soup though.
This is how I like my potato salad. It's a combination of what my mom used to make and my favorite deli potato salads.
My husband prefers a bit more mustard, so if you do also just add a couple more teaspoons of mustard.
Paprika sprinkled on top would be a nice touch also.
Enjoy.
Make this the night before so it is ready to go for breakfast.
My dad used to make this when I was young. It was a favorite of mine.
To make more servings just use a ratio of 1 part corn meal to 4 parts water.
1/2 cup cornmeal + 2 cups water
3/4 cup cornmeal + 3 cups water
1 cup cornmeal + 4 cups water
I love rice krispie treats....decided to try a little healthier version.
This takes care of my craving for something crunchy and sweet without feeling quilty.
I love Hot and Sour Soup. So, I had to give it a try. I'll probably adjust things to get even closer to my favorite take out soup. I'm going to try some dried shiitake mushrooms and hot chili oil next time.
