This is a Quiche-like dish, with no crust, that my sons love. You could make it even less fat by using reduced fat cheese. Even though my husband thinks its only suitable for breakfast (because it's eggs), I like it for dinner too. Very satisfying.
This is one of my family's favorites. I like it best when its made with turkey kielbasa, but we've made it with just about ANY kind of meat. You can use alot less meat in this recipe as well. My husband likes it best meater-- but I've made it with only 1/3 cup of meat, and it stretches just fine to feed 4. Great budget saver, and good for leftovers.
