Here's a great way of making your own Egg Beaters(R) that will cost less than half the price. You can also just make the egg product with out the Southwestern flare and use it for baking, etc.

This is a very versatile recipe; you can toss just about any vegetable you have in your fridge and it will turn out great. I like to substitute chopped sun-dried tomatoes for the fresh tomatoes, it adds a little pizazz to it. Also, try adding some fresh sweet red pepper, yum! Note: The measurements may need to be tweaked a bit, I don't actually measure when I'm cooking I just start tossing and tasting, so feel free to experiment.
