Adapted from a Bon Appetit recipe. Twice baked squash stuffed with sausage.
Quina, corn, chicken and spinache with a bright lemony flavor. Delicious!
Creamy polenta from adapted SimplyRecipes.com. I've also used quick-cook polenta just skip with 30 minute simmer.
Basic Oil and Vinegar with a little twist of soy sauce for some extra flavor.
A slightly lighten up version of a recipe from Bon Appetit/Epicurious.com. I added chicken between the layers for a meat options, but originally the recipe was vegetarian.

Lighten muffins by replacing fat with applesauce, dense and satisfying!
Blended frozen fruit with yogurt & soymilk
Cook pasta as directed. Meanwhile, sautee veggies until soft in med pan. Add sauce. Drain pasta, toss sauce and cooked sauce together. Serve w/.5 oz cheese
