This is a fast, easy and delicious way to get in fresh raw broccoli. I adapted the recipe from the Whole Foods Broccoli Crunch Salad. The ingredients are simple and relatively inexpensive but they charge $8.49 a pound for it....much cheaper to make at home....and fresher.
You can change some of the ingredients to lower the calories and fat by using egg substitute, sugar substitute, no fat milk and yogurt but at 78 calories for a 4 inch pancake, I find acceptible to me.
This recipe makes the juiciest meat and the most wonderful sauce that I've ever had. It's not your regular catsup on top of the meatloaf recipe but is sweet and tangy with enough extra sauce to go on the red skinned mash potatoes or brown rice sides..
I've used this recipe with dry lasagne noodles for 30 years. It's excellent and now I come to find out through this feature of Sparkpeople that it's also relatively low in calorie. You can also use meat sauce but the calorie count would be higher per serving.
We've used this recipe in our family for 30 years and has always been a big hit when served over either cubed boiled potatoes or brown rice. I have altered the original recipe for health reasons by reducing the salt and using no salt added stewed tomatoes so you may want to add a little back in or use regular stewed tomatoes.
