I threw this together tonight and it's so damn nice I had to share...... but I'm rubbish at thinking of what to call things, sorry!
I think the chicken could easily be replaced with something like eggplant or tofu and taste just as lovely if you wanted to make a vegetarian version

The nutritional information does not include salt or pepper as I didn't add any myself.

Glorious chicken salad - a meal in itself, perfect for the lunch box, with a terrible name because I couldn't think of one and my friend wouldn't help me lol
