I got this recipe from a member of the Managing Diabetes Group! team. I left out the Salsa, Green Chilis, and shredded potatoes. I use whole wheat Tortillas instead of white flour ones... Carbs = 27.4 each
Also, I couldn't find just plain breakfast sausage on the list of ingr. so I used the maple flavored one.
On these cold snowy days, a nice warm bowl of creamy soup sounds in order....Has a hint of wine and Oh so Yummmy....
Makes 10 1 cup Servings
Great for a side for lunch with crackers and fruit.
Recipe makes 2 cups. Nutritional Values is calculated on 8 1/4 cup servings.

I made this the other day for lunch and Oh was it Yummy. I place spoonfuls on a leaf of lettuce and had a few whole wheat crackers on the side. What a filling and tasteful Diabetic Lunch.
** use Red Wine Vinegar. not cider vinegar.(couldn't find red wine vinegar on add ingred. page)
