This is the same recipe as on the back of the soup can, but it has been halved.
Delicious, Low calorie and filling.
Chop onions into very small pieces. Chop all other vegetables into uniform, bite-sized pieces. Use olive oil to caramelize onions, then add garlic. After a few moments add all other vegetables. Add Broth, diced tomatoes, and water until pot is close to full. Bring to a boil. Once boiling lower temperature to a mild simmer. Continue simmering for 45 minutes to an hour. Add water as needed. Freezes well.
