This is a very nice appetizer, but may also be used as a light lunch.
As an appetizer, it serves nicely with broiled Halibut or steak.
As a light lunch, serve with 5 or 6 crackers.
This savory main dish is low in calories and very tasty, with an Italian overtone in flavor. The amounts of Bell Pepper and Sweet Onion used depends on individual tastes.
