This cake is a little denser than a traditional cake but it boasts just 4.8 grams of sugar, balanced by 4 grams of protein and roughly 200 calories per piece. I modified a recipe to accommodate my diabetic mom on Easter. Omit the raisins and cut down on 2 grams of sugar and 9 calories per serving.
Originally taken from Idiots Guide to the Superfoods Cookbook, and then modified to suit my liking. I quadrupled the original portions to make this for a potluck-hence, the large servings above!
