A co-worker gave me her recipe for these. They are the most amazing no-bake cookies I've ever had! I try to make it with as much organic ingredients as possible. This is a variation on my mom's meatloaf. It freezes quite well cooked or not.
These are a great and healthy sweet treat for when you're craving apple pie or apple crisp. It's great over vanillia ice cream.

Summer in Ohio can be anything from a nice day, not too humid, and temps in the mid-60s/low 70s to high humidity, the sun beating down, and temps in the 90s. But most of the time I want something light and easy to make with minimal use of the stove, and takes advantage of the produce of the season!
The snow is melting (supposedly) and there's green to be found everywhere. I need recipes to deal with all the wonderful food I'm getting at the Farmers Markets. Here they are!
