This is a nice, nutritional quick meal for lunch or dinner. I use ground chicken for the meat and canned cannellini beans. You can substitute ham or smoked sausage for the meat (of course, that alters the nutritional information).
My family asks for this dish all the time and it is one of my most requested recipes from friends. This is a perfect hot summer's day lunch or dinner meal in itself served on top of lettuce leaves, so light and refreshing.
