Well it's lent right now and I gave up meat. I had a .6 cup portion of Navy Beans defrosted that I needed to use so I decided to try this soup. It was quick and easy and tastes great.
This is a lo-cal, lo everything, nutritious version of one of my favorite dressings. It's great as a dip or spread. Shh! the secret to the nutrition and lo-cal is the tofu, don't tell anyone. This was my first try with tofu and I'm delighted. I hope you enjoy it as much.
For variation: try a few anchovies, capers, anchovy paste, tuna or just the water from canned tuna.
