Summer Garden Chicken Salad - Lifes Just Peachy Version

a lighter, fruitier version of traditional Waldorf salad. I typically make this with nonfat plain yogurt flavored and thinned with fat free raspberry vinaigrette, but was out of plain yogurt and substituted with flavored yogurt, YUMM!

Crab Stuffed Mushrooms

I make these in a little counter top cooker that my hubby bought from an infomercial, not sure what the cooking times or temps would be for stove/oven. A counter top sandwich cooker or grill would work as well.

Peanut Butter Dip

On a peanut butter addiction kick lately. This is a nice, light, filling snack, or have more for a vegetarian breakfast or lunch.

Tofu Aioli

for roasted garlic: put a couple of heads of unpeeled cloves in a Pam-sprayed skillet with a glug of white wine (or broth or water), salt & pepper, then put a lid on and let them braise over low heat til soft. Squeeze them out of their peels.

if you love the cheesy flavor of nutritional yeast, you can use more, the original poster uses 4 Tbsp

You can easily double this recipe. Use as a dip for raw vegetables or spread it on crusty bread or (the best!!!) dollop it on roasted baby red bliss potatoes.

Blueberry Pancakes

Yummy pancakes with a healthy touch - lower in calories and fat & higher in fiber than traditional pancakes and super tasty!

Try with egg whites or egg substitute and/or sugar substitute to further lower the calories & fat.

Need a quick breakfast on the go or healthy dessert that even picky kids love? Try this! Try with your favorite frozen fruits - if the kids balk at flax, just leave it out or use benefiber instead (both substitutions will reduce calorie count, but the benefiber will leave the fiber high)

Mozzarella-Stuffed Turkey Burgers

from EatingWell.com - I haven't tried this yet, but it looks really good, and with the snow blowing outside, I am craving a good grilled burger. Saving it for the first day I can get to the grill, or maybe I will do them on the stove ;)

Mushroom Lasagna

Made this tonight for my daughter and I, along side one containing ground beef for the guys. Taste was good, but I think next time I will saute the mushrooms with some onion, garlic, and italian seasoning in cooking spray first - the fresh mushrooms made our vegetarian lasagna too soupy when they leached their liquid into the sauce, and I think that the extra seasoning will really add to the flavor.

Campbells Chicken & Broccoli Alfredo

from the back of the can - used 1 tsp evoo instead of 2 tbsp butter, added twice as much broccoli and a second can of soup. Could have used less pasta and more broccoli and gotten fewer servings.

I made this and thought, WOW, that's a lot of food. It's supposed to be 4 servings, but my big 10 inch skillet was piled high, but then my teens came home with two extra mouths. I ate about a cup, 3 of the teens ate about a cup each, the third probably about 3 cups, and my hubby ate about 2 cups - so use less pasta and you will have a regular family size meal.

Mexican Lasagna

This was really good, I had to use what I had on hand today, but will be trying it with low fat sour cream and cheese and whole grain tortillas next time. Oh, and my kids said it was "too cheesy", LOL.

Chicken Taco Soup

This started out as one of Chef Megs recipes that I altered to our ingredients and tastes.

Waldorf Salad, Thanksgiving Leftover Style

This Waldorf salad uses cranberry sauce in lieu of mayonaise, making it a lot healthier. I opted against the walnuts because I'm not a big fan.

Adding an eighth of a cup of broken walnuts would add 50 calories and 5 grams of fat per serving.

Also, if you want the creaminess of the mayo, add 2 Tablespoons of Miracle Whip Light for an additional 20 calories and 1.5g fat per serving.

Melanie's Sweet Potato Pie

the nutritional value doesn't include the crust as I never eat the crust. You can bake it in a crust, or bake it without the crust, your choice.

This is the best cornbread dressing I've ever tried! It's not a healthy dish, but since I only make it for Thanksgiving and Christmas dinners, it's worth it!

If you like it milder, eliminate the cayenne or substitute the rotel for diced tomatoes. Use whatever beans you have on hand - I used great northern, but try kidney or black!

Apple Pie Oatmeal

I love a hot bowl of oatmeal on a chilly morning, and mixing up the flavorings keeps it fresh for me. Here's one I tried (and LOVED) this morning.

I used quick cooking oats in the microwave, but this can just as easily be made with an instant pack (microwave so the apples cook!) or with old fashioned rolled oats on the stove or the night before in a slow cooker.

This has the creaminess and flavor of a country (crumb topped) apple pie - minus the crust.

Chicken and Rice Casserole with vegetables

I've been making this family favorite for years, this time I added some frozen vegetables - would like to try it with brown rice, but I was out last night ;)

I use the campbells soups for this, but use whatever brand you prefer. You can use any combination of cream of chicken, cream of mushroom, cream of celery - use 2 cans.

This is a great dish to double and take to a pot luck!

Double Chocolate Smoothie

Make this thicker and more creamy by replacing the ice with frozen bananas and frozen yogurt (place both items in the freezer at least 12 hours before you want to make this recipe) Using a better quality blender or a food processor will also help to reduce the amount of milk required to blend this.

Replace the chocolate syrup with reduced sugar to reduce the calorie content (you *could* use the sugar free, but I don't recommend it because it doesn't have a good chocolate flavor)

Jammin' Jambalaya

I'm playing around with Jambalaya recipes, trying to get close to the one I've been making my family using a seasoning that is no longer available. This one uses a cajun seasoning that I made - recipe can be found her on spark recipes.

This is definitely spicy, adjust the cajun seasoning and tabasco to your palette.

This is really good with a piece of french bread to sop up the juice.

Cajun Seasoning

Most cajun seasonings call for a lot of salt, if you like it saltier and don't have a problem with blood pressure, you can add more. You can also add 3 tsp onion powder, 1/2 tsp oregano and 1/2 tsp basil in the mix as well.

Slow Cooker Pumpkin, chickpea and lentil stew

Fluffy Pumpkin Dip, revised

Had the full fat/full calorie version of this at a party and it was super good on graham crackers and apples. Checking out what the difference would be with lower fat and lower calorie ingredients, will try it out soon and let you know how it turns out.

Zuppa Tuscana

Italian sausage and red potato soup. Tastes just like a famous restaurants soup. You can probably reduce the fat content by using turkey/chicken sausage/bacon and reducing the amount of half and half.

If you can't find the sausage in bulk, you can buy links and removed from the casings before cooking, or cook the links and cut into bite size pieces before adding to the soup.

I prefer "Sara's Sausage" brand for this recipe

Southwestern Vegetarian Chili

just what I had in the cupboard - made a quick yummy comfort meal with a kick for lunch.

Adjust the chili peppers, cayenne and cumin to taste - I like it spicy and this was just right for me.

Spiced Chickpea "Nuts"

From Eating Well Magazine, October 2009. These need more time than the recipe called for, so play around with it. They also need more flavor, I'm thinking a little cayenne? I did use the 'no salt added' can of beans, so that may be why they aren't as flavorful as I had hoped.
They are a filling snack and easy to throw in your purse, though, so play around with the flavors and the cooking time and see what you come up with.

Vegetarian 3 bean chili

I usually make this family favorite with ground beef. I've been making a separate meat-free pan for my vegetarian daughter, and thought I would make a little more and enjoy with her.

Roasted Autumn Veggies with pasta

Another 'thrown together' dish - my daughter cooked too much spaghetti noodles the other night and we needed to use up the sweet potatoes and mushroom before the go bad.

Turned out really good! This uses barilla plus pasta, which adds extra fiber as well as protein, adjust the nutritional values accordingly if you use another type. You can also use other shapes of pasta in place of the thin spaghetti.

Colorful Vegetarian Chili

I need to go to the store, this is just what was in the fridge and cupboard thrown together for lunch, semi-based on the chili recipe that was in my nutrition tracker meal plan for today's lunch.

I used red onion, yellow pepper, and the white and black beans - try your favorite savory veggies and beans, you can also add some fresh tomato at the end of the saute, or canned in with the beans. Spicier? add more cayenne or add jalapeno or habanero peppers to the saute. Less Spicy? reduce the cayenne and/or green chili's.

Adjust the amount of water depending on how "soupy" or thick you want your chili.

Blueberry "Mock" Ice Cream

So, I wanted a banana today, but the only one left in the house was frozen, this is what I came up with.

This is so creamy and delicious that you will never realize it's not the "real thing."

Nutritional info is based on a 4 ounce container of blueberry Yoplait light yogurt (100 calorie pack).

I plan on trying this with other frozen fruit/yogurt combinations (PEACH!!), if you try one comment and let me know what you think!

I made this in a blender because I don't have a food processor - if you do have a food processor, you may be able to make this with less or even no milk and it would be ready to eat sooner.

This makes an excellent snack. I love pico on top of freshly baked tortilla chips. I love picking up all these ingredients at the farmers market and then having this as a snack when I get home.

This stays in the fridge for a few days, but watch the tomatoes, if they begin to look milky toss it.

Fresh Baked Whole Wheat Tortilla Chips

I love these, still warm, with my fresh Pico de Gallo on them. They are so easy and quick, just make one tortilla and enjoy immediately.

The nutritional info for this is based on the Santa Fe Whole Wheat Tortillas (I get them from Sams), if you use a different one you will need to re-calculate.

Slamin' Salmon Patties

My grandpa is a commercial fisherman in Alaska, so I only use his home canned, but you can also find canned salmon at the grocery store.

Farmers Market Chicken

This is a weight watchers recipe that I tried tonight - turned out really yummy. It calls for 3 Tbsp of tomato paste, but I used 5 Tbsp of tomato sauce, it also called for 1 cup of diced yellow squash, but I thought the zucchini was pushing it enough with my veggie-phobic hubby, so I used yellow bell pepper instead.

You can make this a bit healthier by using long grain brown rice, low sodium bullion or broth, and 2 Tbsp of broth instead of the vermouth.

Spinach and Potato Frittata

This is an easy recipe that costs almost anything. Serve along side a waffle with thawed frozen berries on top and finish this easy, low cost meal with a slice or two of turkey bacon or morning star sausage.

Substitute the olive oil for canola to cut cost even more
Substitute the fresh spinace for a 10 oz box of frozen, thawed and the water squeezed out, if you want.

Naked Chicken Burrito

I love these at a local fast food resturaunt, but making them at home saves money and is healthier. This is a quick and easy dinner that the family loves.

Make this with brown rice and reduced fat or fat free cheese (or skip it altogether) to lighten this up.

I serve this family style, with both black and pinto beans for the family to choose between, and sour cream and soft tortillas on the side (also good with corn chips)

Chicken taco meat

quick and easy, even from frozen, this taco meat can be used for tacos, taco salads, chicken burritos, and much more.

This is a go-to meal starter for me, when I've forgotten to plan for dinner, I will serve this as one of those meals above. I use the chicken breast tenderloins, put them in the pan frozen, cover and turn the eye on really low to let them quick-thaw.

Use the amount of seasoning and water your taco seasoning calls for for one pound of meat, if you like your meat spicier add more seasoning (adjust the water accordingly) or add a second can of rotel or a can of diced green chilis.

Beef Stroganoff

A quick and easy family favorite that always brings back childhood memories. You can also reduce the fat and calories a bit more by using reduced fat or fat free sour cream and by cooking the beef and veggies in a non-stick pan with non-stick spray.
When planning for this, keep in mind that the Barilla Plus pastas are packed with great nutrients and require additional cook time over traditional pasta. You can substitute your favorite shape of Barilla Plus pasta.

Frozen Strawberry Mockaritas

OK, so I don't usually do this the "mock" way, but now that I'm working on a healthier lifestyle I can really do without the additional calories in the tequila and triple sec, not to mention the adverse effects that alcohol can have on your body - so even if you prefer the real thing, give these a try.

This recipe calls for Truvia - this is the only artificial sweetener that I know of that comes in granular form.

Your ice should be cracked or crushed before blending.

If fresh strawberries are out of season, use frozen. You can also try other fresh or frozen fruit. If you don't have fresh limes, you can use the bottled stuff.
