REALLY YUMMY! To make thicker, omit beef stock.
My really fussy 9 year-old LOVES this soup and begs me to make it whenever we have any leftover pumpkin or squash.
Simple to make, but tastes great for a lighter meal. Serve with Rice or Homemade Fries and vegetables.
Sweet and Tangy! It looks like a lot of work, but you can make the meatballs ahead of time, and you could even freeze them for a couple of months.
Meatballs are also good on spaghetti with a marinara sauce.
Attmitedly not particularly low-fat (RIBS!), but this is my mom's old recipe, and they are absoletly worth making as a treat once in a while. Father's day, perhaps?
