As a vegan, I am trying to find the right balance of protein. I don't want to rely soley on soy, so I'm utilizing other forms of protein - hemp protein is AWESOME!

The original recipe I found was almost 1300 calories for one serving. I cut it back substantially - I used ronzoni whole wheat lasagna noodles for the recipe.
I found a great recipe for Salmon Penne with Artichoke and Asparagus, but it was about 1200 calories per serving, and had an insane amount of sodium. I played around a bit, and this is what I got - it still tastes great, even my husband will still eat it without all of the cheeses and oils. I crock pot my artichoke, garlic, and basil for about 2 hours in 2 cups of water
