This is a great filling soup. You can make it vegetarian by subbing vegetable stock for the chicken stock. It really sticks to your ribs on a cold Winter's night!
I make these meatballs in advance and them split them into 5 bags and freeze them. Then when I need a quick light meal, I put 1 bag of meatballs into 4 cups of chicken stock, 2 cups of white wine, and 1/4 cup of dry small pasta. Cook til the pasta is tender and then add a full bag of baby spinach.
Frittata made with mostly egg whites, lots of veggies and a little bit of sausage. Balance well with a whole wheat english muffin or my lightened up sweet potato biscuits.
