This chicken salad recipe can be used on a sandwich, in a wrap or on a bed of lettuce. It is super yummy, healthy and creamy, using nonfat greek yogurt instead of mayonnaise!

I make these pancakes ahead of time and freeze them in serving sizes in ziplock bags. In the morning I pop them frozen in my toaster and easily eat them on the road during my commute.
I use the crock pot for this, but it can easily be cooked on the stove. Great source of protein and fiber.
