Delicious fat free way to get your veggies!
This is a chunky Gazpacho that my family prefers vs. pureed. If preferred, veggies can be pureed prior to adding tomato juice, balsamic vinegar and spices.
I serve this lentil soup over brown rice or potatoes to make a meal.
This recipe is inexpensive, high fiber, vegetarian and fat free.
