crockpot refried beans, fat free
This is a riff on another recipe I found online, but using a mix of tofu, eggs, spinach, feta, and other goodies. It freezes well, making it a quick treat in the mornings. Just pop it in the microwave or toaster oven with your toast.
Two ingredients! Good for breakfast, a snack, or dessert.
I found this recipe for vegetarian sloppy joes on Allrecipes.com. It is easy to make using pantry ready ingredients and standard vegetables. This version also does not use faux-meat, which makes it cheaper and a nice change from the usual.
This is an easy but tasty sauce to put over your huevos (eggs) rancheros, or on burritos or tacos. It is also good fresh, with diced red onions.
This is real loosey goosey. A commercially prepared dressing could be used in place of the homemade, though the homemade doesn't take any time. Increase or decrease dressing to taste, and add whatever vegetables you have on hand. If you have rice and beets already cooked, the total time is about 5 minutes.
A running start on your calcium, B12, protein, and fruit requirements, and yummy too!
