Fried tofu for breakfast sandwiches.
Substitute veggie broth for water for more flavor. Top with a sprinkle of Mexican cheese and a dollop of sour cream if you like.
This is a twist on the potato salad Ellie Krieger does.
I tweaked this recipe from Alton Brown. Just a couple of little changes made it better for me.
