I've created a healthy twist on gratin by combining some highly rated recipes from allrecipes with another gratin recipe from SparkPeople that didn't have enough detail in the recipe for me to follow/didn't look creamy enough/didn't want to use egg. First result is surprisingly v. tasty!
Yummy summer salad is delicious chilled on a hot day! Lots of protein and not high in calories. Serving size is about 1 cup.
My second concoction of a vegetarian sloppy joe mix - 100 calories of protein, low-cal, filling goodness. I love this on a toasted english muffin or in place of a beef burger, but it might shine best as burrito filling, or a healthy side dish for a bbq! I can get away with bringing this as a side dish to a bbq or celebration, and then eat it in place of the meaty/cheesy main dish served. :)
As my second concoction, the consistency of this recipe is more solid (less runny) and a bit more spicy (make less spicy by omitting or reducing chilis/spices)
Serving size is 1/2 cup. Makes about 15 servings! (Perfect for a crowd, leftover lunches, or freezing some for quick lunches later, especially in low-carb tortillas!)
I wanted to calculate the calories for this awesome, pretty-healthy, easy to prepare and delicious recipe from the Food Network. I scaled back on the olive oil as well. Delish!
Sometimes I make the dough perfectly and can stretch this recipe to 3 pizzas instead of 2. Since most of the toppings are veggies, it cuts the already-low calories down to a surprisingly low amount!

Easy to make with what you already have in your kitchen - and so good that we had seconds without the buns! Feed a crowd or cut the recipe for a smaller crew.
Looking for a way to use my ripe strawberries in a delicious and healthy way for dinner! Used this vinaigrette on spinach salad with chevre, tomato, bell pepper, cucumber, almonds, and a little chicken sauted in vermouth! Amazing!

I made some adjustments based on my carrot cakes that turned out so amazingly. Am total fan of natural/healthy ingredients, but not so much that only I like it! This yummy recipe makes a great healthy dessert when we have company. Can serve with cantaloupe or strawberries...yum :p
Homemade, whole wheat breadsticks that taste amazing, you know exactly what's in them, and you can eat them without guilt! Best of all, they don't take long - no waiting forever for the dough to rise. (Also makes amazing pizza crust!)
Ghirardelli brownies are my favorite but I wanted to try them with yogurt, couldn't find an exact recipe so I made my own! Used Greek nonfat yogurt, since that seems healthiest.
