Low Carb, Crustless "Cheesecake"
Had to use up my salsa before it went bad, so decided to make a relish to jazz up my meats and seafood. I used what was left in my jar (about 1.5 cups) of PC Original Recipe salsa. You want a salsa that's not chunky. This is very spicy once it's done.
Usually these are made with rice paper and vermicelli, but this is just as tasty plus it's low carb.
Yes, it's very high in sodium and not the healthiest dish, but if you're a die hard reuben lover like I am, you just got to have it (at least once in awhile). Soaking the sauerkraut and the meat first could help - and squeeze out and dry completely before putting together.
Who doesn't love apple pie, esp for breakfast!! This is my higher protein, flour-free version, and it only takes a few minutes to make. You can make the ice cream ahead of time to chill or freeze, or just fix and eat. Either way, it's almost as good as the real thing. Not ultra low carb, but personally, as long as the carbs and proteins are about equal I'm okay with that.
