This makes about 5 - 1 cup servings. It goes great with a grilled cheese sandwich made with 2 slices of 100% whole wheat bread and a slice of mozzarella cheese. Rustic, healthy and low-cal. Easy to modify the vegetables and seasonings to personal taste.
