This is a quick and simple one dish cake. I got the original recipe from vegweb.com and tried adding pureed beets to make it moister.
This is quite delicious, we eat it as a main course and will definitely be planting spaghetti squash in the garden next year!
This soup is perfect for the end of the gardening season when you have more lettuce and zucchini than you know what to do with.
My mom does this - it's delicious, easy, healthy and a great way to use up garden zucchini.
These cookies are a variation on Happy Vegan Chocolate Chip cookies in VegWeb.com. I used whole hazelnuts in hopes that it would slow me down a bit when I'm eating these.
I think my hummous is the best, although the garlic turns a lot of people off. It can be frozen and keeps for a long time. It's a great opportunity to get some raw flax seed oil into your diet.
I made this out of ingredients in the house and my husband and I both enjoyed it quite a bit. Next time I would try adding a squash.

I did these up as a way of trying to get some vegetables for breakfast. The fennel could easily be replace by other spices (curry might be nice).
I adapted this from a meat recipe I read in Chatelaine magazine. It is delicious. I usually use green beans, but we had fresh zuchinni on hand. The original recipe called for asparagus.
