A great tasty way to use lots of zucchini.

A traditional dish perfect for chilly autumn days. Easy to make and lovely to eat.
Potato pancakes made a delicious supper topped with homemade applesauce, grated cheddar cheese, and sour cream. You can add grated carrot or sweet potato with the regular potato for a nice twist. Omit the onion, or substitute some green onions or chives or parsley - this is versatile.
Very easy and very delicious. True comfort food. Use sushi , arborio, or regular short grain rice. Any cheese will work, such as Monterey Jack or Parmesan. Any diced or shredded vegetables could be added with the green onions at the first stage.
The coffee gives an interesting flavour, but orange or apple juice, tea, sherry, wine, or plain water may be substituted.

Alice Water's recipe. I agree with Queen Alice that food should always be made from the finest ingredients. If you want to stay slim and healthy, eat the best food in moderation.
This is a Lee Bailey recipe. I used buttermilk which gives a very tender crumb.

This is the Chocolate Chunk Cookie recipe from Lee Bailey's Country Desserts, 1988. I made smaller cookies than his recipe suggests so there are fewer calories to a serving. Makes 48 cookies.
Perfect for the end of summer when fresh tomatoes and zucchini are plentiful.
Substitute melted butter instead of the canola oil if you wish, and increase the brown sugar up to 3 tablespoons for a sweeter, richer pancake. The nutmeg is a lovely addition but may be omitted.
Tuck a sliver of apricot into each muffin before baking to give extra flavour
From the Canadian Living Summertime Cookbook Special 1983. Serve in smaller slices if you want a lower calorie count. The advantage of this flavourful cake is that it does not need ice cream or whipped cream to make it tasty, just serve it as is, or put some fresh blueberries on the side, and / or a slice of fresh orange.
Substitute types of cheese, or omit if you wish.
This is an easy, delicious dish. The chicken and rice compliment each other very well. Use well trimmed chicken thighs for the best flavour, but substitute chicken breasts if you wish. Serve with a Garden Salad (see recipe).

This is my own recipe. It is very gingery! You can omit the powdered ginger if you want a more modest ginger flavour.

These are delicious mashed potatoes, especially when made with Yukon Gold potatoes. Whip them with an electric mixer for fluffy potatoes.
Because the berries are essentially uncooked, this pie is particularly fresh and luscious tasting.
I do not know what is Irish about this recipe, but it was so named when given to me. To reduce calories and fat, make it a deep dish apple pie using only half the pastry. See instructions for details.

This is an easy and delicious cake that gets even moister the next day. The trick is not to over bake. Bake it in a bundt or tube pan for a cake presentation, or in 24 muffin tins for cupcakes.
A delightfully refreshing salad, so good when made with summer fresh carrots that are sweet and crisp. This is a large recipe - make it with just one pound of carrots and half a cucumber for a family dinner.

From "Slim and Healthy Mediterranean Cooking" by Judith Wills, published in 1992. Recommended to use waxy, not floury potatoes, and to serve the puree with crusty bread and a green salad for a vegetarian meal. Serves 6 as a side dish and 4 as a main meal.
