This is the best egg salad. Period.
A low-carb casserole that will please even the non-dieters.
The chiles can be found at any international market. To lighten the calorie load, I use 2% Mexican blend shredded cheese and 1% milk. Also, to speed this recipe up, I often use chicken breasts off an already-cooked rotisserie from the store.
Similar to hummus, this dip is mild (unless you like a lot of garlic, like me) and healthy.
It is perfect with crudite if you're watching your carbs. It also goes well with pita or works as a sandwich spread. Plus, it's a great way to sneak healthy beans into your diet.
You can experiment with different flavor combinations by adding things like roasted red peppers, kalamata olive, or chipotle in adobo. So simple!
