This easy to make dinner is muy bueno! Serving size equals 2 enchiladas
Saute oil, garlic, peppers, onions, corn, and chicken until chicken is fully cooked.
Add beans, sauce, red pepper, cayenne pepper and chili powder with sea salt and pepper (to taste).
Cook for about one hour over med-med/low heat
Top with mozzarella cheese (optional) and blue corn tortilla chips.
Meatballs will be very mushy, but will become firm during cooking.

One of my favorite things to do in the kitchen is to think OUTSIDE of the box! I love a twist on ANYTHING, and particularly with food! Think about flavors and textures as people...they all belong together in some recipe! Bon apetit!
