This hummus is higher in fat and has a texture more like a nut butter than a hummus. But it is wonderfully delicious and easier to digest than traditional hummus--just eat in moderation. Do not substitute roasted tahini for the raw tahini as the flavor will be too intense.
This raw Waldorf salad is delicious served in individual butter lettuce leaf cups.
This tastes great over fresh spinach or romaine salad. I use evaporated cane juice instead of sugar because it is less refined, and animal bone char is sometimes used to process white sugar. You can substitute white sugar or agave nectar if you want an alternative, or simply skip the sweetener altogether.
Use fresh boiled beets, not canned. Even if you are not usually a beet fan, try this. The cumin, lemon juice and tahini really give the beets a whole new flavor! And using lots of beets reduces the calories and fat over traditional hummus.
Raw zucchini takes the place of noodles in this delicious no-cook summer meal.
