Large flour tortilla filled with chopped carne asada, beans, rice, guacamole & pico de gallo. This is my guesstimate for the purposes of logging.

Salsa-baked salmon with potatoes

Based on recipe from Rick Bayless' Mexican Everyday cookbook, with reduced quantity of oil & adapted for salmon instead of whitefish. This is super-simple, with fish fillets on a bed of potatoes, covered with salsa & baked until cooked.
