This is one of my favorites, but it is a bit garlicky, so adjust the garlic according to your taste. I like this on a bed of sauteed fresh spinach, with more garlic - if you dare. I've also made this with salmon or thinly pounded chicken breast instead of tilapia.
This makes a hearty and tasty stew that's easy to throw together. You can easily make this vegetarian by leaving out the sausage and using veggie broth instead.
This recipe looks and tastes gourmet, but is easy to make. I like to serve it over spinach that was sauteed with olive oil and garlic. This is one of my husband's favorite dinners.
Being that I'm half Greek, I grew up eating tomato, cucumber, and feta salads. This is my version from my childhood memories. I sometimes sprinkle toasted pine nuts on top with some extra basil. It's good with grilled chicken and orzo or rice.
