Great delicious colorful salad for a Summer day, I was craving a salad after my run and I decided to make my own. The Tofu adds the protein needed after a good run and the fresh veggies cool you down from the inside out.
Found this recipe online, but made my own alterations. These are really, really, really peanut-buttery so have some milk close by.
I got this recipe from Dr. Oz's site; however, I added the vegan meat and some additional changes. As the recipe it's suppose to make 16 servings, but it made me 13 cups, so not sure how it will work for you.
1 serving is 1/4 cup
Wanted a little of everything (except for meat) in my salad...I was starving after a run...this is yummy. You can add cherry tomatoes, corn, and even red beans. It is seriously good!
This is the recipe from Spark from my nutrition meal, with my changes. Soy milk instead of regular milk, different type of beans, etc.
