This is an awesome marinade that I've been using since 2006
I got this recipe from Taste of Home magazine. This is easy to make and a wonderful way to use up leftover mashed potatoes in the fridge.
This is great with flour or corn tortillas served on the side. The fresh cilantro is a key ingredient; don't leave it out!
Lowfat casserole that's quick, easy and yummy. The cornbread topping makes it more like comfort food than a lowfat dinner.
Make it as spicy as you want it - just add more chili powder and red pepper sauce can also be added for some zing.
This is a great recipe from a 1978 Betty Crocker Cookbook. 2 stalks of celery (sliced) and 1/2 tsp red pepper sauce may also be added this recipe, but we never put those items in.
